Step:

  1. Melt butter in saucepan or microwave.

  2. Add flour and cook for a minute, stirring frequently.

  3. Whisk in milk slowly and cook, stirring frequently, until sauce thickens and bubbles. Mixture should be thick and smooth.

  4. Stir in cheese and heat until cheese melts. Stir until smooth and evenly combined.

  5. Saute sausage until meat is no longer pink adding green onion during last minute or 2 of cooking. Drain well.

  6. Stir in olives, corn or peas, and eggs.

  7. Bake at 350°F for 30 minutes or until eggs are just set. Stir 2 or 3 times during baking process.

  8. Fold in cheese sauce. At this point you can cover and refrigerate overnight.

  9. If refrigerated, heat the following day to 30 minutes at 350°F or until heated through, stirring once or twice during cooking. If continuing the cooking process, cover and continue to cook for 20 minutes or until eggs are completely set stirring once or twice.

  10. Uncover and top with tomatoes slices. Return to oven for 5 or 10 minutes, until tomatoes are heated through and top with parsley.

  3. 1 1/4 cup milk
  4. 1/2 cup (4 oz) grated cheese
  5. 1/2 lb (8 oz) bulk pork sausage
  6. 1/4 cup chopped green onion
  7. 1/4 cup chopped, stuffed green olives
  8. 1 cup cooked corn or peas
  9. 8 to 12 eggs
  10. 1 tomato wedges and snipped parsley to garnish
