Step:
Drain the water from the flattened rice and place it in a mixing bowl
Add the potato and spinach
Add the dry spices, salt, chillies, ginger,coriander leaves and cumin
Mix well and check the seasoning while you heat enough oil to shallow fry the cutlet in a wok or a pan
Take a lemon sized mixture and form the shape of cutlets you desire
Fry each cutlet till brown and crisp. Alternatively bake at 180 degree celcius for 15 minutes till done after spraying the cutlets with some oil
Serve hot with ketchup or chutnies of your choice
Tips: It’s an excellent tea time snack which can made very quickly.

100 gms spinach leaves cleaned and chopped fine
100 gms thick flatten/beaten rice/poha cleaned and soaked
1 tbspn ginger grated
1 tbspn cumin seeds
1 tbspn dry spices like turmeric, red chilli and dry mango(amchur)
