Step:

  1. Season chicken with salt and pepper. Spray large skillet with cooking spray and heat over medium-heat.

  2. Add chicken chunks to skillet and cook until no longer pink. Remove chicken and keep warm

  3. Add peppers and onions to skillet, add cooking spray as necessary. Cover and cook for 12 minutes, until peppers and onions are tender and lightly browned.

  4. Add garlic, cook stirring for about 30 seconds. Add tomato sauce and water.

  5. Cook over medium high heat until bubbly. Return chicken and heat through, stir in basil.

  6. Serve, topped with crumbled goat cheese

  4. 1 orange bell pepper, sliced
  5. 1 red bell pepper, sliced
  6. 1 onion, thinly sliced

  8. 8 oz tomato sauce
  9. 1/4 cup water
  10. 1/4 cup basil, sliced
  11. 4 Tbsp reduced-fat goat cheese
