Step:

  1. Make a hard to soft dough of all flours mixing Resp colors and cocoa powder in chocolate one and keep aside for 10-15 min. Meanwhile prepare the fillings.

  2. Mix all ingredients of various fillings and keep separately.

  3. Mawa, Chocolate, Orange, Yellow and Dryfruits.

  5. Prepare the small balls of each colored dough.

  6. Roll the balls and start filling them with various fillings. U can shape them with the help of hands of mould. I used hands and mould both.

  8. Keep the white ones separately so as to avoid any colour mixing. I made the white once totally separately. Used mould to shape a few.

  9. Fry them on medium low heated oil till the outer part is crunchy and changes a bit of its colour. Take care while filling, if the mixture will come to the edges, the Gunjhiyas may get open in hot oil. Cover a few white ones with silver verk if u like it.

  10. Relish the fusion taste of tradition with these colourful tasty gunjhiyas.

  11. You may add them to sugar syrup of one string consistency if u want more sweeter version.


Ingredients

  1. For normal mawa Gunjhiya-
  2. 1/2 kg all purpose flour, sieved properly
  3. Lukewarm water to make a relatively hard dough as of Chapati
  4. For filling-
  5. 1 cup mawa
  6. 1/2 cup dryfruits of ur choice crushed or grinded finely
  7. 1 cup grinded sugar
  8. 9-10 cardamom powdered
  9. 1/4 cup grated coconut
  10. For colored Gunjhiya-
  11. 1/2 cup all purpose flour for each colour (chocolate, orange, yellow, green)
  12. Lukewarm water for making slightly hard dough of each color
  13. 1/4 tsp all Resp colours- chocolate, green, orange and yellow
  14. 1/2 tsp cocoa powder for chocolate flavor
  15. For Chocolate Filling-
  16. 1/2 crumbled brownie
  17. 1/4 cup grated milk chocolate
  18. For Orange Filling-
  19. 1/2 cup dried apricot cut in pieces
  20. 1/2 cup apricot fig marmalade
  21. For Green Filling-
  22. 1/2 cup mixed dried fruits (Almonds, raisins, apricot pieces, cashew nuts, walnuts) chopped roughly and freshly grated coconut
  23. 1/4 cup brown sugar
  24. For Yellow Filling-
  25. 1/2 cup crumbled moong dal pinni
  26. 1 cup oil to fry
  27. Mould to shape if required
  28. Silver verk to garnish and add sparkle
