Speck and Parmesan meatballs with butter roasted potatoes

Put mince in a bowl. Add speck and mix. Add Parmesan and egg and mix. Add some breadcrumbs and mix well

Shape into balls and roll in breadcrumbs. Set a side in fridge

Wash, dry and cut potatoes. Melt butter in a bowl for 20 secs or so. Add potatoes and stir well. Put potatoes in a roasting tray

Roast potatoes at 200 for 45 mins total. Shaking a few times. Half way through, put meatballs in a separate roasting tray (I forgot to take a pic of this!) and roast for remaining time until all is cooked and yummy
