Step:
Heat the oil in a saucepan, add the pepper and fry off with the onion until translucent
Add the chicken then stir in the balti paste and spices, cooking for 2 minutes to brown off the chicken
Add the tomatoes and stock. Let simmer for 15 minutes. Adjust to taste - add chilli powder if you like or some mango chutney or sugar to sweeten. Balti shouldn't be too spicy but you know best how you like it!
Serve with boiled rice and naan bread
Ingredients
2 tbsp oil
2 onions, chopped
1 red bell pepper, chopped
4 skinless chicken breasts, cubed into bitesize pieces
4 tbsp Vickys Balti Curry Paste
1 tsp cinnamon
1/2 tsp garam masala / ras-el-hanout
1/2 tsp fenugreek leaves
400 g can of chopped tomatoes
150 ml chicken stock
boiled rice and naan bread to serve
