Step:
In 1/2 cup of warm water add yeast and 2 teaspoon of sugar.
Mix and keep aside for 7-8 minutes to bloom the yeast.
For oats flour I took 1 cup of rolled oats and grinded to make flour.
In a large mixer jar add all the ingredients like oats flour, semolina, all purpose flour, yoghurt, baking powder, salt, warm milk and the bloomed yeast mixture.
Blend them nicely.
Keep aside the mixture for an hour.
In the mean time in a pan heat 1/2 cup of sugar with 4 tablespoon of water.
Cook till sugar mixture is little thick in consistently.
Cut some fresh fruit and add to the sugar syrup.
Cook for 2 minutes and remove from heat. Add few mint leaves.
After an hour the batter will rise in volume and will look like as shown in the picture.
Now to make the muffles heat a non stick pan, grease little butter and pour 2 tablespoon of batter in the centre.
Keep the flame low, cover and cook for 2-3 minutes.
When the pan cake changes colour and firm to touch remove from pan and keep in a plate.
Make all the muffles or pancakes like this in low flame. Grease the pan after making each muffle.
Be careful not to make them dark brown. And do not flip the muffles while cooking. You have to cook them from one side only.
For serving take some muffles in a plate. Place them in a stack.
Top with some prepared fresh fruit and dust some icing sugar to garnish.
Delicious and very healthy dessert is ready to serve.
For richer taste you can add some fresh cream in between each muffle.
