Step:

  1. Dry roast spices until aromatic

  2. Grind spices to fine powder once cooled

  3. Grind tomatoes and cashews to form a puree

  4. Heat oil, add cinnamon and splutter cumin seeds

  5. Add ginger garlic paste, onions and salt. saute until onions are translucent

  6. Add ground puree, saute until oil starts leaving sides

  7. Add spice powders and ground spice. saute for a minute

  8. Add oyster mushrooms, mix well

  9. Cover and cook for 3-4 minutes

  10. Add water and salt. bring to boil

  11. Simmer, cover and cook for 15 minutes until mushrooms are done

  12. Add kasuri methi, coriander leaves and cream. mix well and switch off

  13. Serve hot with roti or naan

  1. 150 grams Oyster Mushroom
  2. For Dry Spices:
  3. 1 tsp Coriander seeds
  4. 1/2 tsp Cumin seeds
  5. 1/4 tsp Fennel Seeds
  6. 1/4 tsp Peppercorns
  7. 3-4 dry Red Chillies
  8. For Gravy:
  9. 2 tbsp Oil
  10. 1 inch Cinnamon stick
  11. 1/2 tsp Cumin
  12. 1 Onion finely chopped
  13. 2 Tomatoes
  14. 7-8 Cashews
  15. 3/4 Cup Water
  16. to taste Salt
  17. 1/2 tsp Turmeric powder
  18. 1/4 tsp Kashmiri Red Chilli powder
  19. 1/2 tsp Garam Masala
  20. 2 tbsp Cream
  21. 2 tbsp chopped Coriander leaves
  22. 1 tsp crushed kasuri Methi
  23. 1 tbsp Ginger garlic paste
