Baked Zucchini Boats

Preheat oven to 350 F
Spray baking dish

Fill pot with water to cover zucchini, add zucchini before heating. Bring to boil, cook addition 5 minutes. Drain and cool.

Cut zucchinis in half, lengthwise and scoop out insides. Chop and reserve inside pulp.

Mix the chopped pulp with remaining ingredients. Use the mixture to re-stuff the hallowed zucchini.

Place in prepared dish, bake 10-15 minutes, broil for about 5 minutes until cheese is brown and bubbly
