Step:

  1. Preheat the oven to gas 4 / 180C / 350F and grease a loaf tin

  2. Mix the flour, sugar, baking powder, baking soda, spices and salt together

  3. Add the sweet potato, oil, milk, juice and vanilla and stir in until just combined

  4. Spoon into the loaf tin and give it a bash on your work surface to level it

  5. Bake for 40 - 50 minutes or until it has pulled in from the sides and a toothpick inserted in the middle comes out clean

  6. Great spread with sunflower spread or for a sweeter treat, some maple frosting

  7. The sweet potato can be substituted for pumpkin in an equal amount. Reduce the liquid added by a couple of tablespoons

Ingredients

  1. 220 grams plain / gluten-free flour
  2. 1/8 tsp xanthan gum if using GF flour
  3. 100 grams granulated sugar
  4. 2 tbsp baking powder
  5. 1 tsp baking soda
  6. 1 tsp cinnamon
  7. 1/2 tsp salt
  8. 1/4 tsp nutmeg
  9. 210 grams cooked & mashed sweet potato
  10. 6 tbsp olive oil
  11. 90 ml light coconut milk
  12. 70 ml orange juice
  13. 1 tsp vanilla extract
