Step:

  1. Preheat the oven to gas 6 / 200C / 400°F and line a baking tray with foil

  2. Toss the salsa ingredients together gently and set aside

  3. Brush the salmon fillets lightly with oil and season with a little salt

  4. Bake for 15 minutes until the salmon is opaque

  5. Place each fillet on top of a bed of salsa and serve with salad leaves, green beans or baby potatoes. My previously posted sweetcorn relish pairs very well with it too!

  4. 6 tbsp red onion, finely chopped
  5. 2 tbsp extra-virgin olive oil
  6. 1 tbsp lemon juice
  7. 1 tsp low sodium salt
  8. 1/2 tsp black pepper
  9. Salmon
  10. 4 salmon fillets
  11. 1 tbsp olive oil
  12. 1 salt to taste
  13. fresh coriander for garnish
