Soak the beans overnight (if you want you can add a little baking soda).
Boil them on the next day until tender, discarding the first batch of water that you boil them in.
Once they are tender add the finely chopped onion, garlic and peppers, the carrot slices, the bay leaves and allow them to boil for a while.
Then add the tomato (both the grated and the tomato paste), allow it to boil for a couple of minutes and finally add the olive oil, the dill, the parsley and the spices.
Empty in a pyrex baking tray and bake at 160°C for about 1 to 1 1/2 hour, until the beans have absorbed most of the liquids.
Ingredients
500 g giant beans
2 peppers, one red and one green
250 g grated tomato or tomato sauce
2-3 tbsp tomato paste dissolved in a little water
parsley and dill finely chopped
2-3 medium-sized carrots in slices
1 large onion, finely chopped
1 clove garlic
2-3 bay leaves
olive oil, salt, pepper and a little cinnamon
