Step:

  1. Clean the octopus.  (Remove the beak and the eyes.)

  2. Wash well and place in a pot.  Do NOT add water.

  3. Add enough vinegar and the bay leaves.

  4. Let cook over medium heat till tender.

  5. Cut into small pieces, and serve drizzled with oil and sprinkled with origanum.
