Step:

  1. Peel and wash the potatoes. These are white sweet potatoes. Dry them off. Heat the oil

  2. Dice the sweet potatoes. Fry in the oil.

  3. Fry in batches. After 1-1/2 minutes take out of oil, set on paper towels, and immediately salt them.

  4. Add enough flour to cover them

  5. Shake them a bit to cover more and remove excessive amounts of flour

  6. Add to oil for 2 minutes
