Step:

  1. Slice the spring onions finely.

  2. Melt the butter in a saucepan and gently fried spring onions for one minute until softened

  3. Add the wine of the move and boil hard to reduce to about 2 tablespoons.

  4. Stir in the cream and salt, pepper and nutmeg to taste.

  5. Bring to the boil and simmer for 2 to 3 minutes until the sauce is slightly thickened

  6. Cut the smoked salmon into 1 inch squares and stir into the sauce with the deal.

  7. Taste and add a little lemon juice

  9. Cook the pasta in plenty of boiling salted water for 8 to 10 minutes or until al dente. Drain well. Toss the pasta with the sauce and serve immediately in warmed bowls

  2. 4 tablespoons butter
  3. 6 tablespoons dry white wine or vermouth
  4. 450 mL double cream
  5. Freshly grated nutmeg
  6. 225 g smoked salmon
  7. 2 tablespoons chopped fresh dill or 1 tablespoon dried dill
  8. Freshly squeezed lemon juice
  9. 450 g farfalle
  10. to taste Salt and ground black pepper
