Step:

  1. Saute onion and jalapeno until soft and fragrant

  2. Add potatoes and brown a bit

  3. Add the rest of the ingredients except for peanut butter and spinach.

  4. Instant pot T pressure for 3 min. Quick release. Add spinach and PB, stiy and serve.

Ingredients

  1. 2 Tbsp olive oil
  2. 1/2-3/4 of an onion diced
  3. 1 minced jalapeno
  4. 2-4 cloves garlic minced
  5. 3 lg sweet potatoes cubed ( i use half russwts as the dish gwts
  6. 14-28 oz can crushed tomatoes
  7. 2 . 14 oz can coconut milk
  8. 1 cup h20
  9. 1 tsp salt
  10. 1 tsp curry
  11. 1/2 cup chopped peanuts
  12. 1/4 cup peanut butter
  13. 1-2 cups spinach chopped
