Step:
Wash ivy gourd and remove the tip and tail ends. Cut in round slices and soak in water.
Heat up the oil in a pan on medium flame. Add mustard seeds and hing. Once the mustard seeds splutter and spices like red chilli powder, coriander cumin powder and turmeric powder.
Mix well spices and cook for a minute. Add sliced ivy gourd and salt. Mix well. Cover and cook till ivy gourd is cooked completely stirring occasionally. Switch off the flame.
Garnish with chopped fresh green coriander leaves and serve hot with roti and rice and dal.

1 tsp Oil
3/4 tsp Mustard Seeds
Pinch Hing
1 tsp Red Chilli Powder
1/2 tsp Turmeric Powder
1 tsp Coriander Cumin Powder
to taste Salt
Handful Chopped Fresh Green Coriander Leaves for garnishing
