Step:
Wash and rinse Rice, Fenugreek seeds, Poha and Dal for 2-3 times. Add them to a bowl along with enough drinking water. Soak them for a good 5-6 hours. After done, strain this water in a bowl. Do not throw it. Use this while grinding as required. Later grind them to a thick paste using this strained water.
Do not add all of the water. Use only as required. The batter should be thick. Cover and allow it to ferment overnight. Add Salt according to taste. Or you can directly add it in the morning before using it. As Salt hampers the process of fermentation. Therefore I recommend you all to mix it in the batter in the morning before proceeding to make these Idlis.
Keep water to boil in a steamer or a pressure cooker or an Idli cooker. Grease the Idli plates well. Pour a tablespoon full of the batter in each of the depression plates. Steam them for 12-15 minutes on a high heat. Insert a skewer to check if they are done after 15 minutes. Do not open the lid every now and then. It will hamper the process.
Allow them to cool down a bit before removing the Idlis onto a serving plate. Keep them warm in a casserole. Serve them with Sambar, Coconut and Onion Tomato Chutneys.
