Step:
Heat water in a pan, add sugar. Bring a boil.
Add tamarind pulp and salt. Cook on a medium flame for 15 minutes.
Now the syrup is reduced to half. Make a slurry of cornflour with 1/2 cup water. Add to sugar syrup. Stir continuously for 5 minutes. Flame change from medium to low.
Add chilli flakes. Mix and cook for 2 minutes on low flame.
Put off the flame. Let it be cooled. Store in an air tight container. Serve with samosas/kachodis.
