Step:

  1. First cut the bhindi into one inches. heat oil in a pan fry the bhindi in hot oil on high flame for 3-4 minutes.then transfer the bhindi into a plate.keep aside.

  2. In the same oil add mustard seeds and hing then add cumin seeds and saute few second then add finely chopped onion saute it untill it turns light pink then add green chillies,ginger garlic paste, tomatoes,salt and all the dry spices except garam masala. Mix well and cook for 3-4 minutes.

  3. Add little water and cover the lid, cook it for 2-3 minutes or until the tomatoes become soft and the oil comes over. Now add the fry bhindi mix well in the masala and add 1/4 cup water cover the lid and cook it for 4-5 minutes.stir occasionally.

  4. After it cook add the garam masala powder and mix well cook for another minute and turn off the gas. The bhindi masala is ready.


Ingredients

  1. 1/2 kg bhindi (cut into 1 inch pieces)
  2. 4 medium sized tomatoes roughly chopped
  3. 2 green chillies finely chopped
  4. 1 large onion finely chopped
  5. 1 tsp ginger garlic paste
  6. 1 pinch heeng
  7. 1/2 cumin seeds
  8. 1/2 tsp yellow mustard seeds
  9. 1/2 tsp red chilli powder
  10. 1 tsp coriander powder
  11. 1/4 tsp turmeric powder
  12. 1/4 tsp garam masala powder
  13. Salt as taste
  14. 4 tbsp oil
  15. as needed Water
