Scrape parwal.Chop off two ends.Scoop out the seeds from parwal keeping the other end intact and lightly fry them in low flame till half cooked.Set aside to cool. Make chena /paneer by boiling 1 1/2 cups milk and adding lemon juice.The milk will curdle.Strain out the water completely but reserve this stock for use in other vegetables.Mash paneer,scraped coconut,ground seeds,pinch of salt and sugar,roasted jeera powder,1/2 tsp ginger paste and chopped green chillies.
Sprinkle cumin seeds in 1 tsp oil and fry the mashed paneer pulp.Add 1 tsp maida and toss till dry.Cool.Stuff parwal with this mix and fry once more in oil.
For the gravy,grind to a fine paste cashewnuts, sesame,coconut adding malai,ginger paste and curd.Add 2 tbsp oil.Sprinkle whole garam masala and dry red chilli.Add the ground paste,salt and sugar to taste,turmeric and red chilli powder.Toss all till oil leaves sides.Add garam masala and little water.Bring to boil and lightly place the fried stuffed parwal over the gravy and toss till masala coats the parwal. Sprinkle raisins.Serve hot with pulao or naan.
