Step:
Take 1 teaspoon yeast, 2 teaspoon sugar and 1 cup warm water in a bowl and keep aside for 7-8 minutes to broom or activate yeast.
In a big mixing bowl add 4 cups of maida or all purpose flour, 2 tablespoon milk powder and salt.Mix well.
When yeast activates add 1 egg and 2 tablespoon melted butter or olive oil. Hobe it a mix.
Make a well at the centre of the flour mixture and pour the yeast mixture.
Mix well to incorporate the yeast mixture to the flour.
Now add warm water in batches to make a soft dough.
Cover the dough and keep in a warm place of your house for about 2 hours.
For the filling take 1 cup of feta cheese in a bowl.
Add 1 handful of chopped parsley or coriander leaves. I also added some chopped mint leaves.
Mix well and the filling is ready to use.
After 2 hours the dough will become double in size.
Punch the dough to release air and transfer to a work place and knead the dough with stretching and folding method to make a smooth dough.
Now divide the dough into 16 equal parts as shown in the picture.
Make balls out of each portion.
Take one ball and roll into an oval thin roti.
Spread 1 tablespoon of cheese filling in one edge.
Place the edge of the roti over the filling and start rolling till half way.
Now with a dough docker roller(as shown in the picture) cut the remaining portion of the roti for the braided design.You can also cut with a knife or pizza cutter.
Now roll again the designed portion of roti to the other edge. Bend the edges to make the desired shape.
Like this make all the breads and place them in a baking tray.
Brush them with milk and keep aside again for 20 minutes.
After 20 minutes bake them in a preheated oven at 200 degree C for 20 minutes or until light golden brown.
My braided breads are ready after 20 minutes of baking.
