Step:
Mix all the dal and beans and soak overnight with water.
Next day in a pressure cooker cook the soaked dal and beans along with water and salt for around an hour in low flame.
After an hour remove from heat,let the cooker cool and strain the dal in a strainer to separate juice from the deal.
In the strained dal pour some more water, stir and drain again to collect remaining juices.
Now heat an iron kadai, add cooking oil.In hot oil put 1 tsp cumin seeds. When seeds start to crackle add chopped ginger, garlic and 2 chopped onions.
Stir for 2 minutes and then add red chilli powder, coriander powder and salt. Saute for few seconds and pour the ras or juices collected.
Let the soup boil. Take 2 tsp beasn in a bowl and make a mixture with water. Stir and add to the boiling ras.
Now cover and cook in slow heat for around 20-30 minutes until the ras becomes blackish in colour.
Now ras is ready to serve with some steamed rice.
Now to make the gude heat another iron kadai. Add 1 tsp of oil.
Add 1 chopped onion. Saute till translucent.
Add the mixed dal-bean which separated early.
Saute and add little salt and some amchur powder to taste.
Remove from heat and pour in a serving bowl.
For serving take some ras in a bowl and serve with bhaat(rice),prepared gude and a slice of lemon.
Ras bhaat is very popular during winter in Uttarakhand.

2 tbsp Gahat dal(local variety)
1.5 tbsp whole black dsl
2 tbsp black chana
2 tbsp black soya bean
1.5 tbsp rajma
1 tbsp white bean
1 tbsp kabuli chana
1 tbsp cumin seeds
2 big onion chopped+ 1 chopped onion
1/2 inch ginger chopped
8-10 garlic pods
1 tsp coriander powder
1 tsp red chilli powder
2 tsp besan
1 tsp garam masala powder
1 tbsp ghee
2 tbsp cooking oil + 1 tsp oil
1 tsp amchur powder(raw mango powder)
to taste Salt
