Step:
Pour semolina in a bowl.Add well beaten curd.Add water accordingly to make a smooth batter.Add little salt.Cover and keep aside for 20 minutes.Now add Eno and mix well.The batter will instantly rise.
Grease idli stand with oil and pour batter in them.It should not be too full.There should be space to allow batter to rise.Heat water in idli stand and place the stand in it.Steam for 8 -10 minutes.If using pressure cooker,remove vent weight and steam.
Insert a knife to check if idli is done and knife comes out clean.Demould and serve hot with coconut chutney or Sambhar.
For Sambhar :Cube vegetables like lauki, brinjal, carrots,beans,peas,chopped drumsticks and onions and boil in salted water.Add tamarind pulp and chopped tomatoes and 1 broken dry red chilli while boiling.Boil 1 cup tur dal with 1/4 th tsp turmeric,1/4 th tsp red chilli powder and salt to taste.Mix the vegetables in the boiled dal.Add 1 tbsp Sambhar powder.Heat 1 tbsp oil in a wok.Sprinkle a pinch of hing and little urad dal, mustard seeds,jeera and pinch of sauf.
Fry few curry leaves and add all to the dal and boil.Serve Sambhar with steamed idli.Coconut chutney can also be served.

1/2 tsp salt
1 tsp Eno fruit salt
2 tsp oil
1/2 cup water
