Step:
For the filling heat 1 tsp oil and fry minced garlic.Add grated ginger and toss.Add the shredded cabbage,onion,carrot and capsicum. Add coriander,chilli sauce,soya sauce ajinomoto,black pepper and pinch of salt and stir fry.Set aside.Add flour in a bowl.Mix oil,little salt and water and knead into a semi stiff dough.Cover and set aside.
After 10 minutes,divide the dough into 8 to 10 balls and make into smooth rounds.Roll the dough into 4 inches small round shape.Place a tablespoon of filling in the centre and brush little water in the edges.Gather the sides like pleats and seal by pinching in the centre.
Once done set them aside.Heat oil in a wok and fry the momos lightly on medium heat.Set them aside.
Now make the tandoori marinade.In a bowl combine roasted gram flour, curd,tandoori masala, food colour,kasoori methi,chopped coriander,red chilli powder,chaat masala,lemon juice,salt and mix well.Add the fried momos in the marinade and coat well.
Preheat a grill pan and drizzle little oil.Place the momos and toss for 20 seconds.Skewer the momos and char grill over high heat on direct flame till black spots can be seen.Sprinkle sliced onions and chopped coriander and lemon juice.Also add chaat masala and serve with heat roasted Mexican tomato salsa or some other dip of choice and salad.
The salad is made with finely shredded cabbage,carrot and onion and sprinkled lemon juice and served on a cabbage leaf.Dip is heat roasted Mexican tomato Salsa with lightly tossed capsicum onion green chillies,coriander and chaat masala and coarsely ground.This makes it an unique fusion recipe.But other dips may also be served.
