Step:

  1. For the filling heat 1 tsp oil and fry minced garlic.Add grated ginger and toss.Add the shredded cabbage,onion,carrot and capsicum. Add coriander,chilli sauce,soya sauce ajinomoto,black pepper and pinch of salt and stir fry.Set aside.Add flour in a bowl.Mix oil,little salt and water and knead into a semi stiff dough.Cover and set aside.

  2. After 10 minutes,divide the dough into 8 to 10 balls and make into smooth rounds.Roll the dough into 4 inches small round shape.Place a tablespoon of filling in the centre and brush little water in the edges.Gather the sides like pleats and seal by pinching in the centre.

  3. Once done set them aside.Heat oil in a wok and fry the momos lightly on medium heat.Set them aside.

  4. Now make the tandoori marinade.In a bowl combine roasted gram flour, curd,tandoori masala, food colour,kasoori methi,chopped coriander,red chilli powder,chaat masala,lemon juice,salt and mix well.Add the fried momos in the marinade and coat well.

Preheat a grill pan and drizzle little oil.Place the momos and toss for 20 seconds.Skewer the momos and char grill over high heat on direct flame till black spots can be seen.Sprinkle sliced onions and chopped coriander and lemon juice.Also add chaat masala and serve with heat roasted Mexican tomato salsa or some other dip of choice and salad.

Ingredients

  1. For stuffing:
  2. 1 cup cabbage shredded
  3. 1 carrot grated
  4. 1 onion finely chopped
  5. 1 tsp minced garlic
  6. 1 tsp grated ginger
  7. 1/4 th tsp salt
  8. 1 pinch ajinomoto
  9. 1/2 tsp black pepper
  10. 1 tsp chopped coriander
  11. 1 tsp finely chopped green bell pepper
  12. 1 tsp green chilli sauce
  13. 1 tsp light soya sauce
  14. 1 tsp oil
  15. For Dough:
  16. 1 cup plain flour
  17. 1/4 tsp salt
  18. 1 tsp oil
  19. 1/2 cup water
  20. For Tandoori Marination
  21. 1/2 cup curd
  22. 1 pinch orange red food colour
  23. 1 tsp ginger paste
  24. 1/2 tsp red chilli powder
  25. 1 tsp kasoori methi
  26. 1/2 tsp chaat masala
  27. 1 tsp tandoori masala
  28. 1/4 th tsp garam masala
  29. 1 tsp hot oil
  30. 1/2 tsp black salt
  31. 1 tsp lemon juice
  32. To taste salt
  33. 1 tsp coriander chopped
  34. As required skewers wooden or metal
  35. 1 tbsp oil
  36. For serving:
  37. 1 onion finely chopped
  38. 1 tsp grated carrot
  39. 2 tbsp shredded cabbage
  40. 1 tsp lemon juice
  41. 1 tsp chopped coriander
