Step:

  1. Preheat oven to 375 degrees. Spray 13x9 baking dish with nonstick cooking spray.

  2. Shred squash with a course grater. Drain on paper towels & pat dry.

  3. Sauté squash in butter in a medium skillet over medium heat for 2 minutes. Remove from heat.

  4. Tear bread into bite-sized pieces. Add bread, cheese, parsley, egg, salt, & pepper to the squash & mix well.

  5. With a knife cut a pocket into the chicken, making sure not to cut through the other side.

  6. Stuff each pocket with 1/4 of the stuffing.

  7. Place chicken in a single layer in prepared baking dish. Bake until cooked through, about 25 minutes.

  8. Brush each chicken breast with honey. Serve.

  1. 2 medium yellow squash
  2. 2 tbsp butter
  3. 3 slices white bread
  4. 1/2 cup shredded Swiss cheese
  5. 2 tsp dried parsley
  6. 1 egg, lightly beaten (or equivalent of egg substitute)
  7. 1/2 tsp salt
  8. 1/8 tsp pepper
  9. 4 chicken breasts
  10. 2 tbsp honey
