Heat 12-inch nonstick skillet over Med-high heat until hot. Add pecans; cook, stirring constantly, 3 to 4 minutes, or until lightly browned. Immediately remove pecans from skillet; set aside.
In same skillet, combine apples, raisins, brown sugar, water, and cinnamon; stir gently to coat apples. Reduce heat, cover lightly and simmer 6-7 minutes, or until apples are crisp-tender. Stir in vanilla.
Increase heat to medium-high.Move apple mixture to one side of skillet. Add ham slices. Cook 3-5 minutes, or until most of the liquid evaporates.
To serve, Place ham slices on 4 plates. Spoon apple mixture over ham. Top with 1 Tbs pecans
