Step:

  1. In a 3 1/2 to 5 quart slow cooler, combine beans, tomatoes, corn, onion, sweet pepper and jalepeno pepper. In a large bowl, whisk together enchilada sauce and soup. Gradually whisk in milk until smooth. Pour sauce mixture over ingredients in cooker.

  2. Cover; cook on low heat setting for 6-8 hours or on high heat setting for 3-4 hours. Stir in shredded Monterey jack cheese and cheddar cheese until melted. Ladle into bowls. If desired, top each serving with sour cream, guacamole and tortilla chips.

  1. 1 (15 oz) can black beans, rinsed and drained
  2. 1 (14.5 oz) can diced tomatoes, drained
  3. 1 (10 oz) package frozen whole kernal corn
  4. 1/2 cup chopped onion
  5. 1/2 cup chopped yellow, green or red sweet pepper
  6. 1 small jalepeno, seeded, if desired, and finely chopped
  7. 1 (10 oz) can enchilada sauce
  8. 1 (10.75 oz) can condensed cream of chicken soup
  9. 2 cups milk
  10. 1 cup shredded Monterey jack cheese (4 oz)
  11. 1 cup shredded cheddar cheese (4 oz)
  12. Sour cream
  13. Guacamole
  14. Tortilla chips
