Step:

  1. Bring a large pot of lightly salted water to a boil. Add the green beans, cover and as soon as the water returns to a boil drain the beans into a colander. Set aside to cool. At this point, you could refrigerate the beans in a covered dish until you are ready to finish the salad.

  2. When the beans have cooled, place them in a salad bowl with the walnuts, cheese and scallions. Toss together gently. Pour the dressing over the salad and toss again. Serve immediately. 396 calories/serving; GL=1, Glycals=4

  1. 1 lb fresh green beans, cleaned, trimmed, and cut into 1" pieces
  2. 1/2 c walnuts, lightly toasted
  3. 1/2 c Gorgonzola cheese, crumbled
  4. 3 scallions, thinly sliced, white and pale green only
  5. 3 tbsp Basic Salad Dressing
