Step:

  1. Heat oven to 400 degrees.

  2. In a medium-sized bowl, toss mozzarella chunks, garlic, cherry tomatoes, sliced zucchini, olive oil, most of the minced basil, and a pinch of salt.

  3. Place the pepper halves on a rimmed baking sheet lined with parchment paper. Evenly divide the filling among the four pepper halves.

  4. Cook for 25-35 minutes until the peppers are crisp and tender.

  5. Drizzle each pepper half with balsamic vinegar, sprinkle with reserved minced basil and salt if needed.

  6. Serve warm.

  1. 8 oz fresh mozzarella, torn into medium-sized chunks
  2. 1 clove garlic, minced
  3. 1 cup cherry tomatoes, sliced in half
  4. 1 small zucchini, sliced
  5. 1 tablespoon olive oil
  6. 4 large leaves basil, minced
  7. to taste Salt
  8. 2 red peppers, split in half, seeds and large ribs removed
  9. Balsamic vinegar for drizzling
