Cut brinjal into thin rounds.It can be cut lengthwise depending on the size of brinjal.Mix besan, cornflour, rice flour,pinch of haldi,salt and little sugar to taste,baking powder, hot oil, kalonji and water to make a thick smooth batter. There should not be any lumps in the batter and crispiness comes from how well the batter is mixed.
Heat refined oil in a wok.Smear little salt to the brinjal rounds.Dip each piece in batter and fry in oil in low to medium flame till crispy.Sprinkle chaat masala or black salt and serve.
