Step:

  1. In a pan heat some oil and the potatoes and cook for 1 minute

  2. Add the cream and cook till potatoes are cooked

  3. Put them in a blender and blend till smooth

  4. Put back in the pan and season with bay leaf and let simmer for 1 minute

  5. Serve in a soup bowl and garnish with cheese and spring onion

Ingredients

  1. 2 potatoes
  2. 1 cup cream or milk
  3. Spring onion for garnishing
  4. Croutons for serving
  5. Mozzarella Cheese optional
  6. Oil for frying
  7. Bay leaf optional
