  4. Keep on the boil for 20 minutes, stirring frequently, until thickened but still quite syrupy

  5. Discard the apple peel, pour the hot jam into a sterilized jar and screw the lid on

  6. Let stand on a tea towel or wire rack to cool. Leave sealed for 24 hours before using

  7. Once opened keep in the fridge and use within a week

  2. 280 g (1 & a scant 1/2 cup) granulated sugar
  3. Juice and zest of 1 fresh lime
  4. Peelings from 1 red apple
