Step:

  1. In a large pan heat olive oil over medium-high heat.

  2. Cook onion, garlic, and cumin in olive oil until lightly browned.

  3. Add vegetable broth, plum tomatoes, all peppers, mushrooms, chili powder, and tomato paste. Mix thoroughly, then cover and let simmer for 45 minutes.

  4. Add vegetable crumbles to mixture and let simmer for 20 minutes.

  5. Add all the beans and let the whole thing cook over very low heat for at least 60 minutes.

  6. Add salt, pepper, and extra cumin to taste.

  1. 3 tbsp Olive Oil
  2. 1 Yellow Onion, Sliced
  3. 1 clove Garlic, diced
  4. 2 cup Vegetable Broth
  5. 1 tsp Cumin (more to taste)
  6. 6 Plum Tomatoes diced
  7. 2 Jalapeo Peppers with Seeds sliced
  8. 1 Yellow Pepper sliced
  9. 1 Red Pepper sliced
  10. 5 Chipotle Peppers (canned) sliced
  11. 8 oz Pack of White Mushrooms
  12. 1 tsp Chili Powder
  13. 12 oz Can Tomato Paste
  14. 10 oz Package of Vegetable Crumbles
  15. 45 oz Kidney, Black, or Pinto Beans (or 15 ounce can of each)
  16. to taste Salt
  17. to taste Black Pepper
