Step:

  1. Prepare corn bread mix according to package directions. (One box, 1 large egg, 1/3 cup milk.)

  2. Gently fold in other ingredients. Leave out the jalapeno.

  3. Place mix into well buttered 5x7 baking dish. I also may use a quart round baking bowl

  4. Top with the jalapeno peppers.

  5. Bake in a preheated 400 degree Fahrenheit oven. 18-20 minutes.

  6. Serve hot. I like a spoonful of chunky salsa and a dollup of sour cream on top.

Ingredients

  1. 1 box jiffy corn bread mix, 8.5 ounce
  2. 1/4 cup frozen corn, thawed
  3. 3/4 cup grated cheddar cheese, divided
  4. 1/2 cup cooked black beans
  5. 1 thinly sliced jalapeno pepper
  6. 1 tbsp honey
  7. 1/4 cup sliced black olives
  8. 1/4 tsp salt
  9. 1 tbsp melted butter
