Step:

  1. Preheat broiler in your oven.

  2. In a bowl combine tuna with all ingredients except tomato, cheese and lettece, mix well to combine.

  3. Evenly divide tuna salad on toasted english muffins, top each muffin with a slice of tomato, top tomato with a slice of cheddar and pepper jack cheese. Place under broiler to melt cheese, serve hot sprinkledwith shredded lettece.

Ingredients

  1. 2 English muffins split and toasted and lightly buttered
  2. 1 5 ounce can tuna, drained I used white albacore
  3. 1 tbsp finely chopped onion
  4. 2 tbsp finely chopped celery
  5. 2 tbsp mayonnaise, more if you like it really creamy
  6. 1 tsp fresh lemon juice
  7. 1/4 tsp garlic powder
  8. 1/4 tsp black pepper
  9. 1/4 tsp dijon mustard
  10. 4 slice of fresh tomato
  11. 4 slice sharp cheddar cheese-or cheese you like
  12. 4 slice pepper jack cheese- or cheese you like
  13. 1/2 cup shredded lettece for garnish
