Step:

  1. Finely dice the tomatoes, bell pepper, onion and cilantro. Only use the tops of the cilantro, discard the stems.

  2. Combine in a large bowl...add juice of the limes (hint: microwave the limes for 20 seconds each to release more juice).

  3. Add the jalapeos (with the juice) and the spices.

  4. Mix well, cover, and refrigerate. May be eaten right away, but the flavor will be better if made the day before.

  5. Always great with chips, as a condiment for many Mexican dishes, on top of eggs, etc...this will stay good and fresh in the fridge for about a week.

  1. 8 Firm Roma tomatoes
  2. 1 Bell pepper (I like yellow, but any color is fine)
  3. 1/2 Red onion
  4. 1 bunch Cilantro
  5. 4 oz Can, diced jalapeos
  6. 3 Limes
  7. 1 tsp Ground cumin
  8. 1/2 tsp Garlic powder
  9. 1/2 tsp Salt
