Step:

  1. Add potatoes, onion and garlic to Crockpot

  2. In large mixing bowl, combine chicken broth, cream of chicken soup, cream cheese and pepper until smooth

  3. Pour liquid mixture over potatoes, onions and garlic

  4. Cover and let cook on low for 8 hrs, or high for 5 hrs.

  5. During last hour of cooking, add the shredded cheddar cheese and bacon bits.

  6. Enjoy as is, or top with green onions!

Ingredients

  1. 3 lb potatoes, peeled and cut into bite size chucks (approximately 9 medium potatoes)
  2. 1 small onion, diced
  3. 2 clove garlic, minced
  4. 1 can cream of chicken soup
  5. 8 oz cream cheese, softened at room temperature
  6. 3 (14.5 ounce) cans of chicken broth
  7. 1 tsp black pepper
  8. 2 cup shredded sharp cheddar cheese
  9. 7 oz real bacon bits (I used half a 15 oz package of Hormel real bacon bits)
  10. 1 green onions, finely chopped (optional)
