Preheat oven to 350°F. Grease 9x5 loaf pan.
Place oats in a small heatproof bowl. Add boiling water, stir, & set aside.
Combine flour, xanthum gum, baking soda, salt, & cinnamon in a small bowl & mix well.
Place butter in a large bowl. Beat with an electric mixer set at high speed until creamy. Add both sugars gradually, beating constantly until well blended. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
Gradually add flour mixture to creamed mixture & beat until smooth. Stir in oats mixture. Spoon batter into prepared pan.
Bake until toothpick inserted into center comes out clean, about 1 hr.
Cool in pan for 10 minutes. Transfer bread to wire rack to cool completely. Then slice & serve .

1 1/2 cup boiling water

1/2 cup butter, softened
1 cup granulated sugar or sugar substitute such as splenda
