Step:

  1. Halve cherry tomatoes and put them on a wooden cutting board lined with parchment paper. Add salt (it draws moisture out of the tomatoes)

  2. Set tomatoes on your balcony in the sun. My tomatoes took 3 days to dry, it's 40C outside. They should be dry but not crispy, you're looking for the texture of a dried apricot. If the tomatoes are too dry, they won't taste good and if they are too watery, they will spoil quickly in the jar, so check regularly on them

  3. Once dry, put tomatoes in a sterilized jar, submerge in good quality olive oil. You can add spices as well, I added fresh rosemary and a whole clove of garlic

  2. 2 tsp fine sea salt
  3. 1 olive oil, extra virgin
  4. 1 garlic clove
  5. 1 bunch fresh rosemary
