Step:

  1. Place canned fruit, onion, garlic, lemon juice, squash, radish, carrot, crushed red pepper, curry powder, salt, & marjoram into the slow cooker. Stir, then add the chicken. Scoop some of the mixture on top of the chicken.

  2. Cover & cook on low for 4 to 5 hours until chicken is cooked through.

  3. Remove chicken from slow cooker, place in covered dish & keep warm.

  4. Add sliced olives & pimentos to the sauce. In a separate small bowl, mix together the water & cornstarch. Pour the cornstarch mixture into the mixture & stir to combine.

  5. Cover & cook on high for about 15 minutes or until thickened.

  6. Serve chicken on a bed of couscous, pour sauce from slow cooker on top.


Ingredients

  1. 2 bone in chicken leg quarters (skin removed)
  2. 1 can pinapple chunks or tropical fruit cocktail (8oz)
  3. 1 small onion chopped
  4. 3 clove garlic finely chopped
  5. 2 tbsp lemon juice
  6. 1 small yellow squash, roughly chopped
  7. 1/4 cup chopped carrot
  8. 1/3 cup radish quartered
  9. 1 tsp salt or to taste
  10. 1 tsp dried marjoram
  11. 1 tbsp crushed red pepper
  12. 2 tbsp curry powder
  13. Finishing Ingredients
  14. 1 tbsp cornstarch
  15. 1 tbsp water
  16. 1/4 cup pimiento stuff olives - sliced
  17. 1 2 oz jar of pimentos
