Step:

  1. Prepare dressing: In a medium bowl, combine all ingredients with a whisk. (Makes 2 cups of dressing)

  2. Wash spinach and place in a large serving bowl.

  3. Add 4 tablespoons dressing and toss to coat.

  4. Top with cranberries, walnuts, cheese and red onion.

  5. Refrigerate unused dressing.

Ingredients

  1. 1/3 cup plus 3/4 tablespoon organic apple cider vinegar
  2. 3/4 cup plus 1 1/2 teaspoons pure maple syrup
  3. 1 tbsp sea salt (I used less since I'm not a salt eater)
  4. 3/4 cup plus 1 1/2 teaspoons organic canola oil
  5. 3 tbsp dried cranberries
  6. 3 tbsp toasted walnuts
  7. 3 tbsp crumbled blue cheese
  8. 1 1/4 to 1 1/2 cups organic baby spinach
  9. 6 julienned slices of red onion
