Step:

  1. preheat oven to 400

  2. line 2 baking sheet with foil and spray with Pam

  3. cut zucchini into 1/4" round circles

  4. place cut zucchini and olive oil in bowl, coat both sides of zucchini

  5. combine panko, paramasain, salt and pepper in a bowl. add zucchini rounds

  6. place rounds on baking pan and place in oven

  7. bake for 22 to 27 minutes until goldem brown, no need to flip

Ingredients

  1. 1 lb zucchini or squash
  2. 1/4 cup panko flakes
  3. 1/4 cup grated paramashsn
  4. 1/4 tsp kosher salt
  5. 1 tbsp olive oil
  6. 1 pinch black pepper
