Step:
put oil in saucepan
add spices. I tend to put all my spices in a bowl before I start so I'm ready to go.
cook the spices for 2 minutes. keep on medium low..
add the water, sugar, and tamarind paste.
turn heat up to medium high and allow it to bubble.
turn down to medium and allow it to cook down for about 25 - 30 minutes. it should thicken as it cooks.
when it was done I allowed it to cool before I put it in glass jars.

SPICES
1 tbsp oil or ghee
1 tsp cumin seeds
1 tsp ground ginger
1/2 tsp ground cayenne pepper
1 tsp fennel seeds
1/2 tsp asafoetida powder
1/2 tsp garam marsala
add after 2 minutes
2 cup water
1 1/4 cup white sugar
3 tbsp tamarind paste
1 cup brown sugar
