  2. Combine all ingredients in a bowl and mix well by hand

  3. Press into the loaf tin and bake for 90 minutes. If you want to, spread some tomato ketchup or BBQ sauce over the top first

  4. Let cool completely and drain off excess fat before slicing

  5. Serve warm with boiled potatoes, greens and onion stuffing and gravy, or cold with potato salad and chutney. Goes great with my fruity brown sauce!

  1. 750 grams pork mince (ground pork)
  2. 100 grams diced bacon
  3. 1 grated apple
  4. 1 small onion, finely diced
  5. 2 slice gluten-free bread made into crumbs
  6. 5 tbsp apple juice
  7. 2 tbsp light coconut milk or other milk of choice
  8. 1 tbsp tomato paste or see my tomato-free tomato sauce recipe
  9. 1 tbsp yellow mustard
  10. 1 tsp dried basil
  11. 1 tsp dried oregano
  12. 1 tsp salt
  13. 1/2 tsp pepper
  14. 1 handful chopped parsley
