Step:
Mix flour and bread crumbs in a bowl. Add the garlic, coriander, turmeric, ginger, pepper, sugar and salt. Stir well, add enough water.
Insert pieces of fish in a solution of flour and fry until cooked. Remove and drain.
Blend all the sauce ingredients and stir-fry a moment. Set aside.
Serve fish fry along with spinach and chilli.
I don't know what this vegetable is called there, if here called KANGKUNG.... maybe it's Morning Glory, Water Spinach, Swamp Cabbage, Watercress, Kale.???

2 medium-size snakehead fish, cut to taste
1 bunch waterspinach, cut then boil
200 gr flour
25 gr breadcrumbs
2 thumb turmeric, pureed
1 thumb size piece ginger, pureed
3 cloves garlic, finely chopped
1 tsp coriander powder
1/4 tsp ground pepper
to taste Sugar and salt
Oil for frying
SAMBAL (sauce):
10 cayenne chilis
5 red chillis
5 onion
2 cloves garlic
1 tomato
