Step:

  1. Peel/cut and boil potatoes until they are really soft (I used approx 5 cups water).

  2. Add 2 sticks margarine in mixing bowl and add the potatoes AND water in with that (I was using my whisk at his point).

  3. Once mixture is smooth, add sugar, eggs, salt and mix well until sugar is desolved.

  4. Let this mixture cool for about 20 to 30 minutes

  5. In a separate Bowl mix two packets of Rapid rise yeast with 1/2 cup lukewarm (not hot) water until smooth and once your potatoes mixture has cooled add the yeast mixture and mix well. This will be where you start using the dough hook.

  6. Slowly start adding all purpose flour until the dough is stiff

  7. Have a floured surface prepared to knead the dough; once kneaded place the dough in a greased bowl. Cover with damp cloth and let rise until the dough doubles in size approximately 45 minutes.

  8. Once the dough has doubled in size; remove from bowl and knead, place back in the greased bowl, let rise again.

  9. Repeat the knead and Rise process a total of 3 X.

  10. Mold into rolls. (Makes about 15 nice size rolls)

  3. 2 cups sugar
  4. 2 tspn salt
  5. 2 eggs
  6. approximately 8 cups of all purpose flour
  7. 2 packages rapid rise yeast
