Step:

  1. Heat the collards

  2. To a hot pan add eggs add salt and pepper

  3. Add water to side of eggs, not on the top of eggs just beside them and cover with lid.

  4. Let steam till just the whites of eggs are done

  5. Slide the eggs on top of collards and serve. I hope you enjoy!

  1. 2 cups leftover collards, see my recipe for Collards that Skye Loves
  2. 3 large eggs
  3. to taste salt
  4. to taste ground black pepper
  5. 1-1/2 tablespoons water
