Step:

  1. Bring a pot of water to the boil

  2. Have ready a large bowl of iced water

  3. Cut a cross in the top of each tomato, then plunge the whole tomato to the boiling water until the skins begin to peel about one minute

  4. Remove with a slotted spoon and place in the iced water. Let them rest until cool enough to handle, then remove the peel and squeeze out the seeds

  5. Chop ate tomatoes and purée them in a blender or food processor.

  6. Chop the remaining two tomatoes and set aside

  7. In a large pot or Dutch oven over a medium heat, cook onions,p, carrot and garlic in oil and butter until the onions start to soften about five minutes

  8. Pour in pureed tomatoes, stir in chopped tomato, basal, Italian seasoning (or fresh herbs) and wine

  9. Place the bay leaf and whole celery stalks into the pot.

  10. Bring to a boil then reduce the heat to low, cover similar for two hours

  11. At the two-hour cooking point add: 1 teaspoon salt; 2 tablespoons tomato paste; one half of pepper; one half of oregano (fresh); 1/2 teaspoon of time (fresh); 1/2 teaspoon salt

  12. Pour the sauce into a blender to purée, then let it cook uncovered to reduce.

  13. Discard bay leaf and there you go!

  1. 10 ripe tomatoes
  2. 2 tablespoons olive oil
  3. 2 tablespoons butter
  4. 1 onion, chopped
  5. 1 green bell pepper, chopped
  6. 2 carrots, chopped
  7. 1/2 teaspoon brown sugar
  8. 4 cloves garlic, minced
  9. 1/4 cup chopped fresh basal
  10. 1/4 teaspoon Italian seasoning (better still fresh thyme and oregano)
  11. 1/2 cup Burgundy wine
  12. 1 bay leaf
  13. Pepper flakes
  14. 2 stalks celery
