Step:
In a bowl add milk, sugar and yeast, mix until it's creamy and frothy. Let it rest for 5min.
Add flour to yeast mixture, combine and knead for 5min until well incorporated, let the dough be soft then rub olive oil and cover for 1 1/2hrs - 2hrs.
Roll the dough and divide in pieces rolling them into a disk shape. Spread butter generously on top of each dough stacking them on top of each other. (For mine I roll a big circle then apply butter generously and fold)
Wrap them with cling film and put in the fridge for 30min.
Sprinkle some flour on rolling surface and roll the dough into a big circle/disk and cut into 12 triangles
Make slits at the circumference and roll to the centre. Repeat the same process on all, you can make some decorations of choice.
Line your baking tray then arrange them and let them rest for 30min or 1hr if you have time.
Egg wash (you can sprinkle sesame, black, flax or chia seeds) and bake in a preheated oven for 30min. Bake at 200 degrees for the first 10min then 190 degrees for 20min. The layers are magical.
